The Meal: quesadillas for kids

Main Dish: Quesadillas

Dessert: Quince

Recipe:

Ingredients:

Quesadillas (Baked):

  1. Large Tortillas
  2. Shredded Mozzarella Cheese
  3. 1 table spoon of Margarine
  4. Sliced Mushrooms
  5. Sliced Onions

Quince:

  1. 2 Quinces
  2. Brown Sugar
  3. Honey

Cooking Directions:

Quesadilla Directions:

  • Sautee Mushrooms. Onions and Margarine on the stove  (I add a pinch of salt)- when cooked, take off stove and let cool
  • Place Tortillas on a foil paper and spread cheese around the middle
  • Spread a tiny bit of Margarine on the edges of the Tortillas (this will help it stick)
  • Spoon Mushrooms and Onions onto Tortillas (I leave the kids Quesadillas plain with just the cheese)
  • Put in the oven at 350 degrees for 15 minutes or until cheese has melted

Quince Directions:

  • Peel Quinces and cut around the core into slices
  • Put slices into a baking pan
  • Sprinkle a bit of Brown Sugar over the slices
  • Drizzle the honey over the slices
  • Bake in the oven at 300 degrees for 30 minutes

Outcome:

We make this often, so I already knew the quesadillas would be a winner.  None of us have ever eaten a quince before so I was nervous to have it as dessert which is why I added the sweet sugar and honey.   I can tell you that both kids and I loved it (hubby not into the fruit so much)!  It would have been amazing served on some ice-cream I am sure, but I didn’t want to overdo the sweets right before bed 🙂
