The Meal: 

Main Dish: Chicken Caesar Salad

Side Dish: Cheeseless Potato Casserole 

Dessert: Cranberry Walnut Cookies 



Chicken Caesar Salad:

  1. 4 Boneless Chicken Breast
  2. Caesar Salad Dressing
  3. 3 tablesppons of Teriyaki Sauce
  4. 3 teaspoons of Season All Salt
  5. 1 bag of Lettuce
  6. 1 sliced Onion
  7. Cut up Cucumber
  8. Croutons

Cheeseless Potato Casserole:

  1. 1 bag of frozen Hash Browns
  2. 2 Egss
  3. 1/4 cup of Riches Whip
  4. 10 ounces of Cream of Mushroom Soup
  5. 2 tablespoons of Flour
  6. Corn Flakes
  7. 1 Slice Onion
  8. margarine

Cranberry Walnut Cookies:

  1. I used Gladders Gourmet cookies…. which always come out amazing!

Cooking Directions:

Chicken Caeser Salad Directions:

  • Cover Chicken with seasonings and cook in the oven until done
  • Mix Salad ingredients with cut up chicken and top with dressing

Cheeseless Potato Casserole Directions:

*Please note that I actually made this up as I went along and don’t remember exact amounts for the ingredients I used.   This is what I did as far as I can recall.

  • Place the frozen hashbrowns in a baking dish
  • Heat a spoonful of margarine on a skillet and saute onions
  • In a bowl, mix eggs, whip, mushroom soup and flour
  • Pour mixture over hashbrowns
  • Pour onions over the top of hashbrowns
  • Cover with corn flakes
  • Melt a stick of margarine and pour over corn flakes
  • Cook in the over for an hour at 425 degrees


This is a really great easy meal to make.  I was really surprised to see how well the kids ate the Chicken Salad.  My daughter doesn’t like dressing, but as long as she ate all her chicken and lettuce, I was happy!  The potato dish was a stretch since I didn’t use cheese (which usually holds it together)- but it really came out yummy!  Definitely something you should try as it’s a very kid friendly dish!

The Meal:chicken for kids

Main Dish: Yellow Chicken

Side Dish: Yellow Corn

Dessert: Yellow Cake Snicker-doodles



Yellow Chicken:

  1. 4 Chicken Breasts
  2. 2 Tablespoons of Olive Oil
  3. 1 Teaspoon of Ground Turmeric
  4. 1 Teaspoon of Mustard Powder
  5. 1 Teaspoon of Garlic Powder
  6. 2 Teaspoons of Brown Sugar
  7. 1 Teaspoon Worcestershire Sauce

Yellow Cake Snicker-Doodles:Yellow Snicker-doodles

  1. 1 box of Yellow Cake mix
  2. 2 Eggs
  3. 1/4 cup f Vegetable Oil
  4. 2 tablespoons of sugar
  5. 1 teaspoon of cinnamon

Cooking Directions:

Yellow Chicken:

  • Place chicken breasts in a cooking dish
  • Combine all ingredients in a mixing bowl and mix well
  • Brush sauce over chicken (both sides)
  • Bake in oven covered at 350 degrees for 45 minutes and then uncovered for 15 more minutes

Yellow Cake Snicker-doodles:

  • In a bowl, mix cake mixture, eggs and oil well
  • in a separate bowl mix sugar and cinnamon
  • Roll dough into 1 inch balls and roll balls into sugar topping
  • Place on a cookie sheet
  • Bake in the oven at 375 degrees for about 10-14 minutes


Yellow was the theme here 🙂 And this night was big for me.  I NEVER EVER eat mustard (I wont even touch it), and I ate this chicken….and liked it.  My kids also ate every last piece.  The Cookies were really easy to make, making them a must for moms short on time!

The Meal: Orange Chicken

Main Dish: Orange Chicken (Baked)

Side Dish: Onion Rings and Orange Slices

Dessert: Oreo Cookie Ice Cream Pie

Recipe:Oreo Ice Cream Pie


Orange Chicken (Baked):

  1. 8 Chicken Breasts (cut into small pieces)
  2. 1 cup of Orange Juice
  3. 1 tbl. spoon of Soy Sauce
  4. 1 envelope of Onion Soup Mix
  5. 1/2 t.spoon of Garlic Powder
  6. 1/2 cup of Brown Sugar
  7. 1 tbl. spoon of Orange Zest
  8. Honey
  9. 2 Eggs

Onion Rings:

  1. I used a frozen package and followed directions on the bag.

Oreo Cookie Ice Cream Pie:

  1. 1 package of Rich’s Whip (defrosted)
  2. 1 container (16 ounce) of vanilla Ice Cream
  3. 1/2 package of Oreos
  4. Graham Cracker pie crust

Cooking Directions:

Orange Chicken Directions:

  • In a bowl mix the orange juice, soy sauce, onion soup mix, zest, garlic powder, and brown sugar.
  • In a small bowl, beat 2 eggs
  • Dip each chicken piece in the egg and then place in a baking pan
  • Pour blended zest mix over all the chicken
  • Squeeze a bit of honey over chicken
  • Bake in oven at 350 degrees for one hour

Oreo Cookie Ice Cream Pie Directions:

  • In a bowl whip up defrosted whip with an electric handmixer
  • Slowly empty ice-cream into bowl, and continue stirring
  • Hand crush Oreos into bowl and continue mixing with hand mixer
  • Place in freezer until hardened


I usually don’t like overly spicy things, so I made up this Orange Chicken Recipe.  It comes out really nice, but you definitely taste the zest!  The onion rings are perfect because they are in the shape of an “O” and the kids thought that was hilarious!  If you haven’t tried the Oreo Ice Cream dessert, you are really missing out…. it’s so super easy to make, and so super easy to finish off :).

The Meal:

Main Dish: Italian Marinated Chicken with sautéed mushrooms and onionitalian chicken

Side Dish: Italian Garlic Bread

Dessert: Ice Cream (of course)




  1. A package of 4 chicken breasts
  2. Half a Bottle of Italian dressing
  3. Garlic powder
  4. Onion powder
  5. Season-All Salt
  6. BBQ Sauce

Mushrooms and Onions:

  1. Mushrooms (sliced)
  2. 1 large yellow onion (sliced)
  3. pinch of Salt
  4. 1 table spoon of Oil (or margarine)
  5. 1 teaspoon of Brown Sugar


  1. 8 slices of Italian Bread (or any type will work)
  2. Margarine
  3. Garlic Powder

Cooking Directions:

Chicken Directions:

  • Place breasts in a glass or foil pan
  • Sprinkle Onion, Garlic and Season-All on each cutlet (both sides)
  • Pour Dressing over chicken
  • Lightly brush BBQ sauce over only one side of chicken
  • Cover with foil and refrigerate for 4 hours
  • Place in Oven at 350 for 45 minutes until golden and no longer pink on the inside

Mushroom and Onion Directions:

  • Heat up a skillet on the stove using the oil
  • Added the sliced and diced mushrooms and onions
  • Add salt, garlic and sugar
  • Cook until the onions are see-through

Garlic Bread Directions:

  • Take 2 tablespoons of margarine and add to a glass bowl
  • Add 1 table spoon of garlic powder and mix
  • put in microwave for 20 seconds
  • Spread on the bread
  • Toast in the oven at 250 degrees from 10 minutes or until crispy


Success!  Both kids finished their chicken and bread.  Of course, that may have been due to the fact that they knew they had to in order to get their ice cream 🙂
