The Meal:
Main Dish: Albacore Tuna Wrap
Side Dish: Apple Strawberry Kugel Crunch
Recipe:
Ingredients:
Albacore Tuna Wrap:
- 1 Can of Albacore Tuna
- Shredded Cheese
- 1 Onion
- 1 Tablespoon of Mayo
- Soft Burrito Wraps
Apple Strawberry Kugel Crunch:
- 1 1/2 cups all-purpose flour
- 1 1/2 Cups of Rolled Oats
- 3/4 Cups of Sugar
- 3/4 of Oil
- 1 tsp. Cinnamon
- 1 can of Strawberry Pie Filling
- 2 Apples peeled and sliced
- 1 tsp. Vanilla
Cooking Directions:
Albacore Tuna Wrap Directions:
- Dice Onion into tiny squares
- Mix Onion, Mayo and Tuna in a bowl
- Place Tuna mix on a wrap
- Sprinkle cheese over Tuna
- Roll wrap up
- Place in oven at 200 degrees for 5-8 minutes
Apple Strawberry Kugle Crunch Directions:
- Grease 9×13 pan. Preheat oven to 350 degrees
- In a large bowl mix, oats, flour, sugar, oil and vanilla until crumby
- Place 1/2 of the of the crumbs on the bottom of pan
- Top with Apples and sprinkle cinnamon on top
- Pour Strawberry filling over the apples
- Top with the rest of the crumbs
- Bake for about 1 hour uncovered
Outcome:
My son loved the and finished his wrap. My daughter on the other hand liked the wrap, but not the Tuna. Next time, I’ll have to cut out the onions, because that was the part she said she didn’t like 😦 . The Apple Strawberry Kugle Crunch can be a side or a dessert. It is also a great dish to top with ice-cream!

The Meal:
Main Dish: Yellow Chicken
Side Dish: Yellow Corn
Dessert: Yellow Cake Snicker-doodles
Recipe:
Ingredients:
Yellow Chicken:
- 4 Chicken Breasts
- 2 Tablespoons of Olive Oil
- 1 Teaspoon of Ground Turmeric
- 1 Teaspoon of Mustard Powder
- 1 Teaspoon of Garlic Powder
- 2 Teaspoons of Brown Sugar
- 1 Teaspoon Worcestershire Sauce
Yellow Cake Snicker-Doodles:
- 1 box of Yellow Cake mix
- 2 Eggs
- 1/4 cup f Vegetable Oil
- 2 tablespoons of sugar
- 1 teaspoon of cinnamon
Cooking Directions:
Yellow Chicken:
- Place chicken breasts in a cooking dish
- Combine all ingredients in a mixing bowl and mix well
- Brush sauce over chicken (both sides)
- Bake in oven covered at 350 degrees for 45 minutes and then uncovered for 15 more minutes
Yellow Cake Snicker-doodles:
- In a bowl, mix cake mixture, eggs and oil well
- in a separate bowl mix sugar and cinnamon
- Roll dough into 1 inch balls and roll balls into sugar topping
- Place on a cookie sheet
- Bake in the oven at 375 degrees for about 10-14 minutes
Outcome:
Yellow was the theme here 🙂 And this night was big for me. I NEVER EVER eat mustard (I wont even touch it), and I ate this chicken….and liked it. My kids also ate every last piece. The Cookies were really easy to make, making them a must for moms short on time!

Main Dish: X-tra Cheesy Baked Potatoes
Side Dish: Xochitl Chips
Dessert: X-tra awesome Banana Bread
Recipe:
Ingredients:
X-tra Cheesy Baked Potatoes:
- Potatoes
- Shredded Mozzarella Cheese
- Sautéed Mushrooms (optional)
- Sautéed Scallions (optional)
- Pinch of Salt
- Pinch of Garlic Powder
- Teaspoon of Margarine
Cooking Directions:
X-tra Cheesy Baked Potatoes:
- Bake Potatoes in Microwave for 10 minutes (or until baked)
- Cut in half and let cool a bit
- Add Salt and Margarine
- Add Mushrooms and Scallions
- Spread as much cheese over as you want
Outcome:
Yup, there are potatoes under the cheese in that picture! This is one of my favorite go-to easy meals and the Xochitl chips on the side were an awesome addition! My kids had fun scooping up the potato with the chips!

Waffles:
- Frozen kind = the easiest kind!
Outcome:
Easy, Easy, Easy! You can never go wrong with breakfast for dinner! Also, cutting the fruit up in the shape of a “W” makes the kids that much more excited about eating it. They even had a contest of taking bites out of the watermelon until it looked like a “V”. It was very cute!

Ingredients:
Sandwiches:
- Bread (I used Challah Bread)
- American Cheese
- Mozzarella Cheese
- Yellow Pepper
- Medium Yellow Onion
- Butter
Strawberries:
- 1 package of Strawberries (cut into halves)
Cooking Directions:
Sandwiches:
- Cut bread into slices
- Spread the butter on the inside of each slice
- Place a piece of American Cheese on one side of the bread
- Sautee sliced up pepper and onion
- Place as many pieces of pepper and onion on each sandwich
- Add more cheese on top of peppers and onions
- Place top bread slice on top
- Put in a Panini maker until toasted
Outcome:
As a child (and picky eater myself), I lived on Grilled Cheese. Most kids I know, will eat a cheese sandwich. This is a great way to get your child to eat dinner, and include some veggies in it! Also, making the sandwich in a Panini Maker, just seems to make it all the better and more appetizing!

Dessert: Reese’s Peanut Butter Cup Cookie Brownies
Recipe:
Ingredients:
Ravioli:
- I cooked it from a pre-made frozen batch
- Pasta Sauce
Reeses Peanut Butter Cup Cookie Brownies:
- 1 batch of pre-made chocolate chip cookies
- 12 Reeses Peanut Butter Cups
- 1 Brownie Mix (oil, eggs, water)

Cooking Directions:
Reeses Peanut Butter Cup Cookie Brownies:
- Press cookies down in each square
- Put a Reeses Peanut Butter Cup in each square upside down
- Mix Brownies according to box and pour into each square- filling to the top
- Bake in oven at 350 degrees for about 18 minutes
Outcome:
Did someone say the best dessert of my life? Yes, that’s right. Basically, all of my favorite desserts in one. You can’t go wrong. Do it, I promise you won’t regret a second of biting into that chocolatey, gooey, peanut-buttery taste of heaven.

The Meal: 
Main Dish: Quesadillas
Recipe:
Ingredients:
Quesadillas (Baked):
- Large Tortillas
- Shredded Mozzarella Cheese
- 1 table spoon of Margarine
- Sliced Mushrooms
- Sliced Onions
Quince:

- 2 Quinces
- Brown Sugar
- Honey
Cooking Directions:
Quesadilla Directions:
- Sautee Mushrooms. Onions and Margarine on the stove (I add a pinch of salt)- when cooked, take off stove and let cool
- Place Tortillas on a foil paper and spread cheese around the middle
- Spread a tiny bit of Margarine on the edges of the Tortillas (this will help it stick)
- Spoon Mushrooms and Onions onto Tortillas (I leave the kids Quesadillas plain with just the cheese)
- Put in the oven at 350 degrees for 15 minutes or until cheese has melted
Quince Directions:

- Peel Quinces and cut around the core into slices
- Put slices into a baking pan
- Sprinkle a bit of Brown Sugar over the slices
- Drizzle the honey over the slices
- Bake in the oven at 300 degrees for 30 minutes
Outcome:
We make this often, so I already knew the quesadillas would be a winner. None of us have ever eaten a quince before so I was nervous to have it as dessert which is why I added the sweet sugar and honey. I can tell you that both kids and I loved it (hubby not into the fruit so much)! It would have been amazing served on some ice-cream I am sure, but I didn’t want to overdo the sweets right before bed 🙂

Side Dish: Hash-browns with onions and yellow peppers
Recipe:
Ingredients
- A Package of Hot Dogs
- A Package of Hot Dog Buns
- 4 Idaho Potatoes
- One small Yellow Onion
- 2 orange peppers
- 4 tablespoons of veg. oil
- Salt
Cooking Directions:
- Set oven to 420. Put Hotdogs in a foil pan and cook in oven for 10-15 min.
- Grate potatoes into a bowl
- chop up onion into small pieces
- Chop peppers into 1 in squares
- Heat a skillet on stovetop at a medium heat
- Add potatoes, onions and peppers to skillet and let cook for 10 min
- Add a couple piches of salt
- Turn over hasbrowns, and take them off the fire when golden
- Serve and enjoy with your fav. condiments!
