The Meal: 

Main Dish: Chicken Caesar Salad

Side Dish: Cheeseless Potato Casserole 

Dessert: Cranberry Walnut Cookies 

Recipe:

Ingredients:

Chicken Caesar Salad:

  1. 4 Boneless Chicken Breast
  2. Caesar Salad Dressing
  3. 3 tablesppons of Teriyaki Sauce
  4. 3 teaspoons of Season All Salt
  5. 1 bag of Lettuce
  6. 1 sliced Onion
  7. Cut up Cucumber
  8. Croutons

Cheeseless Potato Casserole:

  1. 1 bag of frozen Hash Browns
  2. 2 Egss
  3. 1/4 cup of Riches Whip
  4. 10 ounces of Cream of Mushroom Soup
  5. 2 tablespoons of Flour
  6. Corn Flakes
  7. 1 Slice Onion
  8. margarine

Cranberry Walnut Cookies:

  1. I used Gladders Gourmet cookies…. which always come out amazing!

Cooking Directions:

Chicken Caeser Salad Directions:

  • Cover Chicken with seasonings and cook in the oven until done
  • Mix Salad ingredients with cut up chicken and top with dressing

Cheeseless Potato Casserole Directions:

*Please note that I actually made this up as I went along and don’t remember exact amounts for the ingredients I used.   This is what I did as far as I can recall.

  • Place the frozen hashbrowns in a baking dish
  • Heat a spoonful of margarine on a skillet and saute onions
  • In a bowl, mix eggs, whip, mushroom soup and flour
  • Pour mixture over hashbrowns
  • Pour onions over the top of hashbrowns
  • Cover with corn flakes
  • Melt a stick of margarine and pour over corn flakes
  • Cook in the over for an hour at 425 degrees

Outcome:

This is a really great easy meal to make.  I was really surprised to see how well the kids ate the Chicken Salad.  My daughter doesn’t like dressing, but as long as she ate all her chicken and lettuce, I was happy!  The potato dish was a stretch since I didn’t use cheese (which usually holds it together)- but it really came out yummy!  Definitely something you should try as it’s a very kid friendly dish!

A-Z Dinners for Kids | Letter X

The Meal: potatoes for Kids

Main Dish: X-tra Cheesy Baked Potatoes 

Side Dish: Xochitl Chips

Dessert: X-tra awesome Banana Bread

Recipe:

Ingredients:

X-tra Cheesy Baked Potatoes:

  1. Potatoes
  2. Shredded Mozzarella Cheese
  3. Sautéed Mushrooms (optional)
  4. Sautéed Scallions (optional)
  5. Pinch of Salt
  6. Pinch of Garlic Powder
  7. Teaspoon of Margarine

Cooking Directions:

X-tra Cheesy Baked Potatoes:

  • Bake Potatoes in Microwave for 10 minutes (or until baked)
  • Cut in half and let cool a bit
  • Add Salt and Margarine
  • Add Mushrooms and Scallions
  • Spread as much cheese over as you want

Outcome:

Yup, there are potatoes under the cheese in that picture!  This is one of my favorite go-to easy meals and the Xochitl chips on the side were an awesome addition!  My kids had fun scooping up the potato with the chips!

The Meal:veggie-burgers for Kids

Main Dish: Veggie-Burgers

Side Dish: Very awesome Vegetables

Dessert: Vanilla Ice-Cream

Ingredients:

Veggie-Burgers:

  1. I used Morning-Star brand
  2. Slices of American Cheese

Very awesome Vegetables:

  1. Peppers
  2. Onion
  3. Any other veggies you know your kids will eat!

Cooking Directions:

Veggie-Burger Directions:

  • Heat up according to box and put cheese on it
  • Top with a bun

Very awesome Vegetables:

  • I cooked them on the stove top and seasoned with salt, a little margarine, garlic powder and a little brown sugar

Outcome:

Best part about the meal…..the veggies as a side dish!  I try not to make too many different types because if you add even one veggie in there that your child does not like, odds are he/she won’t eat any of them.  So I kept it simple and they really came out good (thank you, brown sugar)- and it’s nice to hear my 3 year old proclaim “I love Vegetables”!

The Meal:

nuggets and nachos

Main Dish: Nuggets

Side Dish: Nachos

Dessert: Natural Made Popcorn (I would have done Nectarines, but they are out of season)

Recipe:

Ingredients:

Nuggets:

  1. I used Morning Star Nuggets

Nachos:

natural popcorn

  1. Tortilla Chips
  2. Cheddar Cheese
  3. Mozzarella Cheese
  4. 4 Scallions

Natural Popcorn:

  1. Make your own at home with the kids!

Cooking Directions:

Nacho Directions:

  • Line a foil pan with Nacho Chips
  • Sprinkle shredded cheese (some of both) over chips
  • Layer more chips over the cheese
  • Sprinkle diced scallions over chips (I only put it over half so the kids part was plain)
  • Layer more cheese on the top
  • Place in oven at 350 degrees for 8-10 minutes or until cheese is melted to perfection!

Outcome:

Nuggets work any time.  The nachos were good, especially with the onions.  Other nacho variations would have included beans, but I hate beans (sorry to my husband who likes them).  I really wanted to do something with nectarines, but couldn’t find them at any produce store, so I had to be creative with another N choice.  Alas, I made Natural Popcorn, which my daughter said was cheating.  Although, that didn’t stop her from finishing it off.  Also, I put the popcorn in little popcorn boxes (see above picture) that can be bought at any dollar store.  We let them watch t.v. as they ate it, and it really made it exciting for them!

A-Z Dinners For Kids | Letter M

The Meal:M food night

Main Dish: Macaroni and Cheese

Side Dish: Melon Slices

Dessert: Muffins

Recipe:

Ingredients:

Macaroni and Cheese:

  1. 32 ounces (2 boxes) of elbow macaroni (this makes tons- so be prepared for leftovers)
  2. 1 Bag of Shredded Cheddar Cheese
  3. 1 Bag of Shredded Mozzarella Cheese
  4. 5 pieces of American  Cheese (sliced up)
  5. 1 Cup of Butter
  6. 10 tablespoons of Flour
  7. 8 tablespoons of Butter (for breadcrumb mixture)
  8. 2 cups of Breadcrumbs

Muffins (Banana Chocolate Chip):

  1. 1 stick of Margarine (melt, then let cool)
  2. 2 Eggs
  3. 1 cup of Sugar
  4. 1 tea spoon of Salt
  5. 1 1/2 cups of Flour
  6. 1 tea spoon of Baking Soda
  7. 3-4 mashed Bananas (ripe)
  8. 2 tea spoons of Vanilla Extract
  9. 1 cup of Chocolate Chips

Cooking Directions:

Macaroni and Cheese:

  • Cook Macaroni according to box
  • In a sauce pan, melt Butter over a medium flame
  • Stir in Flour
  • Add Milk slowly
  • Stir in the Cheese
  • Cook over a low fire until cheese is melted and sauce has thickened a bit
  • Place Macaroni in a baking dish
  • Pour sauce over Macaroni
  • In a small sauce pan combine Margarine and Breadcrumbs until brown (about 10 minutes)- mix along the way
  • Spread Breadcrumbs over Macaroni
  • Bake in oven at 350 degrees for about 30 minutes

Muffins (Banana):

  • Combine all ingredients in a mixing bowl and thoroughly mix
  • add in Chocolate chips (I first make 6 muffins with out the ch. chips, for people who want a somewhat healthier option.  I then add the chips to the rest of the mixture).
  • Pour into muffin tin (fill 3/4)
  • Bake in oven at 350 degrees for 45 minutes or until brown (makes 18)

Outcome:

Macaroni is way better homemade than out of the box!  The kids weren’t too crazy about the breadcrumbs so I gave them scoopings from the middle and bottom of the tinpan.  The children loved the melons cut up with little toothpicks in them, and actually finished that first!  The toothpicks are a great way to present a food in a fancier and more exciting way to children (as long as the kids are old enough to handle them).  As always the desert was what they wanted most!  And any chance I get to make any Banana Bread dish, I take it (it’s my favorite too).

A-Z Dinners With Your Kids | The What, Why And How

Let’s face it, a lot of kids are picky eaters.  Especially mine.  Over the years I have picked up a few tricks on getting a child to eat.  The biggest trick:  A-Z Dinners with KidsInvolve the child in the food choice and decision!  When they have ownership in the meal they are much more excited about it and way more likely to eat it.

A-Z Dinners with your kids not only gets the children excited about eating, but it also reinforces their knowledge of the alphabet.  My 5 year old is learning to read, and my 3 year old is starting to identify letters.  This is a perfect opportunity to nurture their learning with out them really knowing!

How to Encourage your child to Participate:

  • Explain to your children that you are going to do a really fun project with them for many dinners.
  • Tell them how each dinner will start with a letter of the alphabet.
  • The night before, go over the letter of the next dinner with your children by showing them a visual of the letter and sounding it out with them.
  • Have your children guess foods that begin with that letter and let them even try to suggest the menu.
  • If the letter of the day is the same letter that begins your child’s name, make it even more special and let that child choose something on the menu!
  • On the day of, routinely ask them what “letter of the day it is” to keep it fresh in their heads.
  • For any part of the meal where it is possible INVITE your children to help prepare the meal.  Examples:
    • Help mix an ingredient in a bowl
    • Set the table
    • Taste a finished product 🙂
    • Pour an ingredient in

Most importantly, show your children that YOU are excited about this!  Your enthusiasm will rub off on your whole family.

A-Z Dinners for Kids | Letter H

The Meal: hot dogs and hashbrowns

Main Dish: Hot Dogs

Side Dish: Hash-browns with onions and yellow peppers

Recipe:

Ingredients

  1. A Package of Hot Dogs
  2. A Package of Hot Dog Buns
  3. 4 Idaho Potatoes
  4. One small Yellow Onion
  5. 2 orange peppers
  6. 4 tablespoons of veg. oil
  7. Salt

Cooking Directions:

  • Set oven to 420.  Put Hotdogs in a foil pan and cook in oven for 10-15 min.
  • Grate potatoes into a bowl
  • chop up onion into small pieces
  • Chop peppers into 1 in squares
  • Heat a skillet on stovetop at a medium heat
  • Add potatoes, onions and peppers to skillet and let cook for 10 min
  • Add a couple piches of salt
  • Turn over hasbrowns, and take them off the fire when golden
  • Serve and enjoy with your fav. condiments!

Outcome:

This is a favorite for any kid (and husband).  The kids loved it and even had multiple servings- no surprise!
